Peas sown in cold, wet ground will rot off ... Place the guttering in the greenhouse, or a cold frame. Keep the compost moist and transplant into the garden once the seedlings have established.

Add the chopped onion and minced garlic; cook until the onion is transparent (about 3 minutes or so). Add the peas, spinach, vegetable stock, and fresh thyme; bring to a simmer and cook for 5 minutes.
